Mango Tomato Salsa with Grilled Chicken

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

For the Mango Tomato  Salsa:

  • 1 ripe mango, peeled and diced
  • 1 ripe tomato, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

For Cooking:

  • 1 tablespoon olive oil (for frying)


For the Grilled Chicken:

  • Prepare the Chicken:
    • In a bowl, mix olive oil, salt, pepper, paprika, garlic powder, and dried oregano. Coat the chicken breasts with this mixture, ensuring they are well-covered.
  • Cook the Chicken:
    • Heat your DiamoTech Frying Pan over medium-high heat and add olive oil. Place the seasoned chicken breasts in the pan. Cook for about 6-8 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  • Rest and Slice:
    • Remove the chicken from the pan and let it rest for a few minutes before slicing it into thin strips.

For the Mango Avocado Salsa:

  • Prepare the Salsa:
    • In a bowl, combine diced mango, diced avocado, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Gently toss the ingredients together until well combined.


  • Serve:
    • Arrange the sliced grilled chicken on a plate and spoon the mango avocado salsa over the top.
  • Garnish:
    • Optionally, garnish with additional cilantro and a wedge of lime.
  • Enjoy:
