Ingredients:

For the Marinade:

  • 1/4 cup olive oil

For the Skewers:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 small yellow squash, cut into 1-inch slices
  • Wooden skewers, soaked in water

Instructions:

Marinate the Chicken:

  • In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Place the chicken cubes in a resealable plastic bag or a bowl and pour the marinade over them. Seal the bag or cover the bowl, and refrigerate for at least 30 minutes or up to 4 hours.

Prepare the Skewers:
