Vegetarian Air Fryer Samosas

Savor the crisp and golden perfection of Vegetarian Air Fryer Samosas—a modern twist on a traditional favorite. Filled with a tantalizing blend of spiced potatoes, peas, and aromatic herbs, these samosas are encased in a light and flaky pastry that crisps to perfection in the air fryer. 

Ingredients:

For the Filling:

  • 2 cups boiled and mashed potatoes
  • 1 cup peas (fresh or frozen)
  • 1/2 cup finely chopped carrots
  • 1/2 cup finely chopped onions
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons vegetable oil

For the Samosa Dough:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • Water (for kneading)

For Air Frying:

  • Cooking spray or oil for brushing the samosas

Instructions:

For the Filling:

  1. In a pan, heat 2 tablespoons of vegetable oil. Add cumin seeds and let them splutter.
  2. Add chopped onions, grated ginger, and minced garlic. Sauté until the onions are translucent.
  3. Add chopped carrots and peas. Cook for a few minutes until the vegetables are tender.
  4. Add mashed potatoes, garam masala, ground coriander, turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes. Remove from heat and let the filling cool.

For the Samosa Dough:

  1. In a large bowl, combine the all-purpose flour, salt, and vegetable oil. Gradually add water and knead to form a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Assembling and Air Frying:

  1. Preheat your air fryer to 375°F (190°C).
  2. Divide the dough into small lemon-sized balls. Roll each ball into a thin oval or circle.
  3. Cut the circle in half to form two semi-circles. Create a cone shape by folding the semi-circle and sealing the edges with water to form a triangular pocket.
  4. Fill each cone with a generous amount of the cooled potato filling, then seal the open edge to form a triangular samosa.
  5. Lightly brush or spray the samosas with cooking oil to promote crispiness.
