Vegan Air-Fried Empanadas

Delight in the crisp perfection of Vegan Air-Fried Empanadas, where a flaky and golden exterior encases a savory medley of black beans, corn, tomatoes, and spices. This plant-based take on the classic Latin American dish embraces modern cooking with an air fryer, resulting in a delightful crunch without compromising on flavor. 

Ingredients:

For the Filling:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)

For the Empanada Dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cold vegan butter or solid coconut oil
  • 1/2 cup cold water
  • 1 teaspoon salt

For Brushing (optional):

  • 1 tablespoon plant-based milk (e.g., almond, soy)

Instructions:

For the Filling:

  1. In a large mixing bowl, combine black beans, corn, diced tomatoes, red onion, minced garlic, ground cumin, chili powder, salt, pepper, and chopped cilantro. Mix well until the ingredients are evenly distributed.

For the Empanada Dough:

  1. In a large bowl, combine the flour and salt. Add the cold vegan butter or coconut oil and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, a little at a time, and knead the dough until it comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Assembly and Air Frying:

  1. Preheat your air fryer to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface and cut out circles using a round cutter or a glass.
  3. Place a spoonful of the black bean and corn filling in the center of each dough circle.
  4. Fold the dough in half, creating a semicircle, and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  5. To make them crispy and flakey, Place the empanadas in the EaZy MealZ crisper basket, leaving space between each one.
  6. Air fry for 12-15 minutes or until the empanadas are golden and crispy, flipping them halfway through for even cooking.
  7. Optional: Brush the empanadas with plant-based milk for a golden finish.
