  • 1 large egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (for coating)
  • Cooking spray or olive oil (for spraying or brushing)

Instructions:

  • Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  • Prepare Mashed Potato Mixture:
    • In a large bowl, combine the leftover mashed potatoes, grated Parmesan cheese, flour, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Shape into Patties:
    • Scoop out a portion of the mashed potato mixture and shape it into a patty. Repeat until you've used all the mixture. The size of the patties is up to your preference.
  • Coat with Breadcrumbs:
    • Place the breadcrumbs in a shallow dish. Coat each mashed potato patty in breadcrumbs, pressing lightly to adhere.
  • Prep Air Fryer Basket:
  • Air Fry:
    • Arrange the coated mashed potato patties in a single layer in the air fryer basket, making sure they are not too crowded. Cook in batches if needed.
    • Air fry for 12-15 minutes or until the patties are golden brown and crispy, flipping them halfway through the cooking time.
  • Serve:
    • Once done, remove the crispy mashed potato patties from the air fryer. Serve them hot with your favorite dipping sauce or as a side dish.

Enjoy your crispy mashed potato patties straight from the air fryer! They make a delightful and satisfying snack or side dish.
