Crispy Air-Fried Vegan Sushi Rolls

Inside each roll, creamy avocado, crisp cucumber, and julienned vegetables are enveloped in a light layer of tempura batter, creating a delightful contrast of crunch and freshness. The air fryer imparts a golden and crispy exterior to these vegan sushi rolls, transforming the ordinary into an extraordinary culinary delight.


For the Sushi Rolls:

  • 2 cups sushi rice, cooked and seasoned with rice vinegar, sugar, and salt
  • Nori (seaweed) sheets
  • Avocado, sliced into thin strips
  • Cucumber, julienned
  • Carrots, julienned
  • Red bell pepper, julienned
  • Sesame seeds (optional)
  • Soy sauce, for dipping
  • Pickled ginger and wasabi, for serving (optional)

For the Tempura Batter:

  • 1 cup all-purpose flour
  • 1 cup ice-cold water
  • 1 teaspoon baking powder
  • 1 tablespoon cornstarch
  • Ice cubes

For Coating:

  • Panko breadcrumbs


Prepare the Sushi Rolls:

  • Prepare the Ingredients:
    • Cook sushi rice according to package instructions. Season with rice vinegar, sugar, and salt. Prepare the sliced avocado, julienned cucumber, carrots, and red bell pepper.
  • Assemble the Sushi Rolls:
    • Place a sheet of nori on a bamboo sushi rolling mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top.
  • Add Fillings:
    • Arrange the avocado, cucumber, carrots, and red bell pepper along the bottom edge of the rice. Optionally, sprinkle with sesame seeds.
  • Roll the Sushi:
    • Using the bamboo mat, roll the sushi away from you, starting at the bottom edge. Moisten the top edge with a bit of water to seal the roll. Repeat the process with the remaining ingredients.
  • Slice the Rolls:
    • Using a sharp, wet knife, slice the rolled sushi into bite-sized pieces.

Prepare the Tempura Batter:

  • Prepare the Batter:
    • In a bowl, whisk together flour, ice-cold water, baking powder, and cornstarch until you achieve a smooth batter. Add a few ice cubes to keep the batter cold.

Coat and Air Fry the Sushi Rolls:

  • Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  • Coat in Tempura Batter:
    • Dip each sushi roll into the tempura batter, ensuring it is fully coated.
  • Coat in Panko Breadcrumbs:
    • Roll the battered sushi in panko breadcrumbs, ensuring an even coating.
  • Air Fry:
  • Serve:
    • Remove the crispy air-fried vegan sushi rolls from the air fryer and let them cool for a few minutes. Serve with soy sauce, pickled ginger, and wasabi.
