- 1/2 cup (115g) unsalted butter, plus a little more for greasing
- 1/4 cup (50g) granulated sugar
- 3 large eggs
- 1/3 cup (40g) all-purpose flour
- 1/4 tsp salt
- 1 tsp vanilla extract
- Powdered sugar, for dusting (optional)
- Fresh berries or vanilla ice cream, for serving (optional)
- Preparation: Preheat your air fryer or oven to 425°F (220°C). Grease six spots of the EaZy MealZ casserole pan generously with butter to ensure the cakes don’t stick.
- Melt Chocolate and Butter: In a heatproof bowl, combine chocolate chips and butter. Melt them together using a microwave in 20-second intervals, stirring after each interval until smooth. You can also melt them over a pot of simmering water (double boiler method).
- Add Sugar: Once the chocolate mixture is smooth, whisk in the granulated sugar until fully combined.
- Incorporate Eggs: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Add Dry Ingredients: Gently fold in the all-purpose flour, salt, and vanilla extract, being careful not to overmix.
- Fill the Casserole Pan: Divide the batter equally among the six greased spots of the EaZy MealZ casserole pan. The batter should fill each spot about 3/4 of the way.
- Bake: Place the casserole pan in the preheated oven and bake for about 10-12 minutes. The edges of the cakes should look firm, but the center should still be soft. Keep a close eye on them to ensure they don't overbake; the gooey center is the signature of a lava cake!
- Cool and Serve: Remove the EaZy MealZ casserole pan from the oven and let the cakes cool for about 1 minute. Using a knife or spatula, gently go around the edges of each cake to loosen them. Carefully invert the cakes onto plates. Dust with powdered sugar, and serve immediately with fresh berries or a scoop of vanilla ice cream, if desired.
