Air-Fried Parmesan Zucchini Chips


  • 2 medium zucchinis, thinly sliced
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • Cooking spray or oil mister


Prep the Zucchini:

  • Wash and dry the zucchinis. Slice them into thin rounds, about 1/8 to 1/4 inch thick.

Create the Coating Mixture:

  • In a shallow bowl, combine breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Mix well to evenly distribute the flavors.

Coat the Zucchini Slices:

  • Dip each zucchini slice into the beaten eggs, allowing any excess to drip off. Then, coat the zucchini slice with the breadcrumb mixture, pressing gently to adhere the coating.
