For the Beef Stew:

  • 1.5 pounds stewing beef, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and chopped
  • 1 cup frozen peas
  • 3 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For the Air Fryer:

  • Cooking spray

  • 1. In a bowl, toss the cubed beef with flour, salt, and pepper until coated.
  • 2. Preheat your air fryer to 375°F (190°C).
  • 3. In the DiamoTech  9.5” Fry Pan, heat olive oil over medium-high heat. Add the coated beef and cook until browned on all sides. Remove and set aside.
  • 4. In the same DiamoTech Pan, sauté the chopped onion until translucent. Add minced garlic, dried thyme, and dried rosemary. Cook for another minute.
  • 5. Stir in tomato paste and cook for a minute. Deglaze the skillet with red wine (if using), scraping up any browned bits from the bottom.
  • 6. Transfer the beef and the onion mixture to the EaZy MealZ Air Fryer Casserole Pan.
  • 7. Add chopped carrots, potatoes, and frozen peas to the dish.
  • 8. Pour in the beef broth, ensuring that the ingredients are mostly submerged.
  • 9. Cover the dish with aluminum foil.
  • 10. Air fry the beef stew at 375°F (190°C) for about 45-50 minutes, stirring occasionally, until the meat is tender and the vegetables are cooked through.
  • 11. Carefully remove the dish from the air fryer using oven mitts, as it will be hot.
  • Serve the Air-Fried Beef Stew with Vegetables warm, and enjoy a comforting and hearty meal that's perfect for chilly days.
