Roasted Vegetable and Hummus Wraps

Ingredients:

For the Roasted Vegetables:

  • 1 cup purple cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Wraps:

  • 4 large whole wheat or gluten-free tortillas
  • 1 cup hummus (store-bought or homemade)
  • 1 ripe mango, peeled and sliced
  • 1 cucumber, thinly sliced
  • 1 cup mixed sprouts (such as alfalfa or radish sprouts)
  • 2 tomatoes, thinly sliced

Instructions:

Roast the Vegetables:

  • Preheat your oven to 400°F (200°C). Toss the sliced purple cabbage and julienned carrots with olive oil, salt, and pepper. Spread the vegetables on your EaZy MealZ Crisper Sheet and roast in the preheated oven for about 15-20 minutes or until they are tender and slightly caramelized. Remove from the oven and set aside.

Prepare the Wraps:

  • Lay out the tortillas on a clean surface. Spread a generous layer of hummus onto each tortilla, leaving about an inch border around the edges.

Layer the Ingredients:

  • Place a handful of roasted purple cabbage and carrots onto the center of each tortilla. Add slices of ripe mango, cucumber, mixed sprouts, and tomato on top of the roasted vegetables.

Fold and Roll:

  • To wrap the ingredients, fold in the sides of the tortilla, then roll it up tightly from the bottom, enclosing the filling.

Serve:
