Pumpkin-Stuffed Ravioli

Plump pockets of pumpkin or butternut squash-filled pasta, lovingly prepared and infused with fall's favorite flavors, are perfectly paired with a velvety sage-infused cream sauce. Cooked to perfection in a wok, this recipe marries the convenience of stir-frying with the cozy comfort of a homemade Italian-inspired meal. 

Ingredients:

For the Pumpkin-Stuffed Ravioli:

  • 1 package (about 20-24 pieces) of pumpkin or butternut squash stuffed ravioli
  • 1 cup canned pumpkin puree
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup ricotta cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

For the Creamy Sage Sauce:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2-3 cloves garlic, minced
  • 8-10 fresh sage leaves, chopped (plus extra for garnish)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

For the Pumpkin-Stuffed Ravioli:

  1. Cook the pumpkin or butternut squash stuffed ravioli according to the package instructions until they are al dente. Drain and set aside.
  2. In a mixing bowl, combine the canned pumpkin puree, grated Parmesan cheese, ricotta cheese, nutmeg, salt, and pepper. Mix until the filling is well combined and smooth.
  3. Carefully fill each cooked ravioli with a spoonful of the pumpkin filling. Seal the ravioli by pressing the edges together, creating a crescent shape or the shape of your choice. Repeat with all the ravioli.

For the Creamy Sage Sauce:

  1. Heat your DiamoTech EaZy Flip Wok over medium-high heat and add the butter and olive oil. Allow the butter to melt and the oil to heat up.
  2. Add the minced garlic and chopped sage leaves to the wok. Stir-fry for about 1-2 minutes until fragrant, being careful not to let the garlic brown.
  3. Reduce the heat to medium and pour in the heavy cream. Stir well and let the sauce simmer in the wok for about 5-7 minutes, or until it thickens. Season with salt and pepper to taste.

To Serve in the Wok:
